1 C. Flour
1/2 C. Butter
1/2 C. Powdered Sugar
2 Eggs
1 C. granulated sugar
1/4 tsp. salt
2 tsp. grated lemon rind
2 T. lemon juice
1 Pkg. (3oz.) softened Cream Cheese
1 T. Powdered Sugar for Top
In a mixer beat butter and 1/2 C. Powdered Sugar until fine crumbs form. Press evenly into dish with bottom of drinking glass. Bake until crust is lightly brown, about 15 minutes.
Beat eggs, sugar, and salt until light and fluffy. Add lemon juice and rind. Blend in cream cheese. Pour over crust and bake about 25 minutes. Sift powdered sugar on top.
